I am rounding/assuming what the calories would be… and have no clue what fat would be (but low I’m sure)
Calories (approximately): 100
2.5 leaves of red leaf lettuce
6 tomatoes with goat cheese (see previous post)
1 teaspoon of quinoa (see previous post)
2 tablespoons of strawberry vinaigrette dressing
1. Mix together!
*I should have used a little less dressing
Cherry Tomatoes Filled With Goat Cheese
(if you know me, you know I LOVE goat cheese)
Total Fat: 2.9g
1/4 pound goat cheese
1/4 cup minced fresh basil
1/2 teaspoon of salt
1/2 teaspoon of freshly ground black pepper
1. In a medium-sized bowl, combine the cheese, basil, salt and papper. Mix with a fork until well blended.
2. Cut the top off of each cherry tomato. Using a small spoon (or just squeezing them like I did) scoop out the pulp to make a hollow, yet sturdy, shell. Brain off any juice that may be in the tomato shells.
3. Using a small spoon, scoop about 1 teaspoon of the cheese mixture and carefully stuff into the tomato shell. Repeat until tomatoes or cheese mixture is used up.
I do have to say that there is a little too much salt… so use less salt! But I only had a few with dinner to try them, and I’m saving the rest for a snack tomorrow.
